Next, lightly grease a clean cookie sheet or a piece of parchment paper—this is crucial to prevent your beautiful candied apples from sticking as they cool and harden. Red Moscato Candied Apples

These adult-friendly Red Moscato candied apples are a sweet and tart delight, generously dipped in toasted almonds and rich semi-sweet chocolate for an irresistible crunch and flavor.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 teaspoons canola oil (for greasing)
  • 4 Fuji apples (or other crisp, tart apples)
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 3/4 cup Gallo Family Red Moscato (or water for a non-alcoholic version)
  • 8 drops red food coloring (optional, for vibrant color)
  • 1 cup toasted sliced almonds
  • 1/4 cup mini chocolate chips

 

Directions:

  1. Lightly grease a piece of parchment paper with canola oil and set aside.
  2. Wash apples thoroughly and dry them completely. Insert a popsicle or lollipop stick firmly into the center of each apple.
  3. In a nonstick saucepan, combine the sugar, light corn syrup, Red Moscato (or water), and red food coloring. Bring the mixture to a boil over medium-high heat. Once boiling, do not stir.
  4. Continue to cook the mixture without stirring until it reaches exactly 285 degrees F. (140°C) on a candy thermometer. This is the hard-crack stage. If you don’t have a thermometer, a small amount of syrup dropped into very cold water should form hard, brittle threads.
  5. While the candy mixture is cooking, in a small bowl, combine the toasted sliced almonds and mini chocolate chips.
  6. Once the candy mixture reaches temperature, immediately remove the pan from the heat. Carefully tilt the pan slightly to pool the candy mixture.
  7. Working quickly, dip each apple into the hot candy mixture, swirling it in the pot to coat completely. Be extremely careful not to touch the hot candy mixture.
  8. After coating, remove the apple from the pot and continue to swirl it gently for a few seconds to allow any excess candy to drip off and the mixture to harden slightly.
  9. Immediately dip the warm, coated apple into the almond and chocolate chip mixture, pressing gently to adhere.
  10. Place the finished apples onto the prepared greased parchment paper to harden completely, which usually takes about 15-20 minutes.
