There’s a special kind of magic that happens when certain foods mingle on your plate, creating a symphony of flavors and textures that’s greater than the sum of its parts. For me, that magic often involves baked beans mixed generously with potatoes. It’s more than just a preference; it’s a culinary philosophy. And if it hasn’t quite caught on as a widespread trend yet, prepare yourself, because this combination is too delicious to ignore.

The concept of baked potatoes smothered in saucy beans isn’t just a fleeting idea; it’s an incredibly satisfying culinary experience that promises a burst of comfort in every bite. It’s a trend I wholeheartedly endorse, bringing together two beloved components into one harmonious dish that’s perfect for any occasion, from casual weeknight dinners to festive summer gatherings.

While some prefer to keep their food components neatly separated on their plate, I’ve always been drawn to the delightful chaos of mixing and swirling everything together. There’s an undeniable joy in allowing flavors to meld, creating new and exciting combinations with each forkful. This approach to eating, for me, started early in life and has influenced many of my favorite recipes, including this standout loaded baked potato and baked bean casserole.

I distinctly remember my grandfather, a man of simple pleasures and profound culinary wisdom, introducing me to the sublime pairing of mashed potatoes and corn. He’d expertly dollop a generous spoonful of fluffy mashed potatoes onto my plate, then use the back of his spoon to create a deep divot. Into this little potato crater, he’d deposit a mound of sweet, golden corn. And as if that wasn’t already a masterpiece, he’d lavishly drown the entire savory mountain in rich, homemade gravy. From that moment on, the idea of mixing foods wasn’t just acceptable; it became an adventure, a fundamental part of my culinary identity.

With Fourth of July celebrations and countless summer cookouts just around the corner, baked beans are an absolute must-have. This casserole takes those classic cookout flavors and transforms them into a hearty, shareable dish that’s perfect for feeding a crowd or simply enjoying with family. It’s a guaranteed crowd-pleaser, delivering both substance and sensational taste that embodies the spirit of summer gatherings.

To infuse the potatoes with an extraordinary depth of flavor, I began by cooking them in a small amount of reserved bacon fat – a secret weapon for unparalleled richness. Into this savory foundation, I introduced diced onions, colorful sweet peppers, and a generous sprinkle of garlic powder. This aromatic blend cooks down beautifully, tenderizing the potatoes while allowing them to absorb all the delicious flavors. Once perfectly crisp and tender, this flavorful potato mixture is transferred to a casserole dish, where it’s folded together with even more crispy bacon pieces and a generous helping of freshly grated sharp cheddar cheese. The ultimate finishing touch involves an even, decadent layer of the savory Pacific Organic Baked Beans, followed by an additional handful of cheddar cheese, ensuring every bite is packed with cheesy goodness before the casserole makes its way to the oven.

1 medium onion, diced (about 1 cup)

½ teaspoon kosher salt

¼ teaspoon black pepper

½ teaspoon garlic powder

½ cup diced red pepper

½ cup diced green pepper

1 ½ cups shredded cheddar cheese, divided

1 (13.6 ounce) box Pacific Organic Baked Beans with Pork

2 scallions, sliced

Directions:

Preheat the oven to 350 degrees F. Lightly butter an 8-inch-by-8-inch casserole dish.

In a large sauté pan, add the bacon. Cook over medium heat until the bacon is crispy. Remove the bacon from the pan with a slotted spoon and place on a paper towel-lined plate to drain. Set aside.

Drain the bacon grease, reserving 2 tablespoons.

Add potatoes, salt, pepper, and garlic powder to the sauté pan with the reserved bacon grease. Cook, stirring occasionally, for 10 minutes.

Add the onions, green pepper, and red pepper to the pan with the potatoes. Cook, stirring occasionally, for 10 minutes or until the potatoes are crispy and tender. Add salt and pepper to taste.

Transfer the potato mixture to your prepared casserole dish. Stir in reserved crispy bacon and ½ cup shredded cheddar cheese.

Top with an even layer of the Pacific Organic Baked Beans and then sprinkle with the remaining shredded cheddar cheese.

Bake for 20-25 minutes or until the mixture is bubbly and the cheese is beautifully melted and golden.
