The Perfect Chicken for a Perfect Meal

For this recipe, I often like to use a generous amount of chicken to ensure every bite is hearty and fulfilling. My go-to choice is PERDUE® Perfect Portions Boneless, Skinless Chicken Breasts. A standard pack typically contains five individually wrapped breasts, totaling about 1.5 pounds. The individual packaging is a game-changer for me, especially since we’re a smaller household. It allows me to easily take out exactly what I need for a meal without having to thaw and re-freeze or repackage the remaining portions. This convenience significantly cuts down on prep time and food waste, making meal planning much simpler and more efficient. The chicken cooks up beautifully, remaining tender and juicy, which is crucial for a dish like Alfredo where dry chicken would detract from the overall experience. Expert Tips for the Best Chicken Alfredo Primavera

Creating a truly exceptional Chicken Alfredo Primavera is easy with a few key techniques. Let’s ensure your dish is perfect every time, full of flavor and with that ideal creamy texture:

  • Achieving a Silky Alfredo Sauce: The secret to a velvety smooth Alfredo lies in gentle heat and gradual additions. Make sure your cream and milk are at room temperature before adding them to the pan to prevent temperature shock, which can sometimes cause separation. When incorporating the Parmesan cheese, turn off the heat first. This prevents the cheese from clumping, becoming stringy, or even breaking the sauce. Stir continuously until the cheese is fully melted and beautifully incorporated, creating that luscious consistency we all crave. Freshly grated Parmesan will melt much better than pre-shredded varieties.
  • Perfectly Cooked Chicken: Overcooked chicken can be dry and tough, detracting from the overall enjoyment of the dish. To keep your chicken breasts juicy and tender, cook them until they reach an internal temperature of 165°F (74°C). A meat thermometer is your best friend here. After cooking, always let the chicken rest for 5-10 minutes on a cutting board before slicing. This crucial step allows the juices to redistribute throughout the meat, ensuring every slice is moist and flavorful.
  • “Al Dente” Pasta is Key: For pasta that holds up beautifully in a rich, creamy sauce without becoming mushy, cook it “al dente” – meaning firm to the bite. Follow the package directions for cooking time, but start checking a minute or two before the suggested time. Remember, the pasta will continue to cook slightly when added to the hot sauce, so don’t overcook it initially in the boiling water. This gives your dish the perfect bite and texture.
  • Don’t Waste the Pasta Water: The starchy pasta water is your secret weapon for a truly cohesive and emulsified sauce. The starches released from the pasta help bind the sauce ingredients together, allowing the creamy alfredo to cling better to the pasta and preventing it from becoming too thick, separated, or watery. Always reserve at least half a cup before draining the pasta – you might not use it all, but it’s invaluable to have on hand for adjusting sauce consistency.
  • Seasonal Vegetable Variations: The “Primavera” in the name directly refers to spring, suggesting an abundance of fresh, seasonal vegetables. While this recipe uses squash, broccoli, mushrooms, and bell pepper, feel free to get creative with what’s in season or what you love. Asparagus, peas, spinach (added at the very end), cherry tomatoes (halved), or even thinly sliced zucchini and carrots would be fantastic additions or substitutions. Just be mindful of cooking times for different vegetables; add tougher, root vegetables earlier and more tender, leafy greens later to ensure everything is perfectly cooked.

Serving Suggestions to Complete Your Meal

While Chicken Alfredo Primavera is a complete and satisfying meal on its own, a few simple additions can elevate your dining experience and balance the richness of the dish:

  • Crisp Green Salad: A light, refreshing green salad with a zesty vinaigrette dressing provides a lovely contrast to the creamy pasta. The acidity helps cut through the richness and adds a fresh element to your meal.
  • Garlic Bread or Crusty Ciabatta: What better way to enjoy every last drop of that delectable Alfredo sauce than with warm, crusty bread? Garlic bread is a classic pairing that never disappoints, perfect for soaking up the creamy goodness.
  • Light White Wine: A glass of crisp Pinot Grigio, a dry Sauvignon Blanc, or an unoaked Chardonnay can beautifully complement the creamy flavors of the Alfredo sauce without overpowering them.
  • Fresh Herbs: A generous sprinkle of fresh chopped parsley or basil just before serving adds a burst of vibrant color, aroma, and fresh flavor that brightens the entire dish. Don’t underestimate the power of a simple garnish!

Chicken Alfredo Primavera

Tender slices of juicy chicken and seasonal veggies tossed with bow-tie pasta in a rich, creamy, and cheesy alfredo sauce. This comforting dish is perfect for any weeknight, ready in just 30 minutes!

Yield: 4-6 servings

Total Time: 35 minutes

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients:

  • 2 tablespoons unsalted butter, divided
  • 3 tablespoons olive oil, divided
  • 4-5 boneless, skinless chicken breasts (about 1.5 pounds), such as PERDUE® Perfect Portions
  • 1 teaspoon seasoned salt
  • 1 medium squash (yellow or zucchini), cut into 1/2-inch cubes (about 1 and 1/2 cups)
  • 1 small head broccoli, cut into small florets
  • 1 (8-ounce) package sliced mushrooms
  • 1 red bell pepper, cored and chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste for desired heat level)
  • 1/2 cup dry white wine (such as Pinot Grigio or Chardonnay)
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus extra for serving
  • 16 ounces dried bowtie pasta (also known as farfalle)
  • Kosher salt and freshly ground black pepper, to taste
  • Fresh chopped parsley for garnish

Directions:

  1. Heat 1 tablespoon of butter and 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Season both sides of each chicken breast generously with seasoned salt and a pinch of black pepper. Add the seasoned chicken to the hot skillet and cook for 5-7 minutes per side, or until golden brown and cooked through to an internal temperature of 165°F (74°C). Remove the chicken from the pan and transfer it to a cutting board; allow it to rest for at least 5 minutes before slicing. This resting period helps keep the chicken juicy.
  2. While the chicken is cooking, bring a large pot of water to a rolling boil. Season the boiling water with a few generous pinches of kosher salt – this seasons the pasta from within and enhances its flavor. Add the bowtie pasta and give it a stir to prevent sticking. Cook according to package directions until al dente, usually about 10-12 minutes, stirring occasionally. Before draining the pasta, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set aside.
  3. Return to the skillet where you cooked the chicken. Turn the heat down to medium. Add the remaining 1 tablespoon of butter and 1 tablespoon of olive oil to the pan. Add the chopped vegetables (squash, broccoli, mushrooms, red bell pepper, onion – *except* the garlic) and red pepper flakes to the pan. Stir to coat the vegetables thoroughly with the oil and butter. Cook, stirring often, until the vegetables are tender-crisp, about 5-7 minutes. *Refrain from seasoning with additional salt until the veggies are finished browning to prevent them from releasing too much water too quickly.* Add the minced garlic and a generous pinch of salt and pepper to the pan and cook for another minute until fragrant.
  4. Deglaze the pan by pouring in the white wine. Use a wooden spoon or spatula to scrape up any browned bits from the bottom of the skillet – these fond bits add tremendous depth of flavor to the sauce. Continue to cook, stirring occasionally, until the wine has reduced by half, which usually takes about 3-4 minutes.
  5. Stir in the whole milk, heavy cream, and the reserved 1/2 cup of pasta water. Bring the mixture to a gentle boil, then immediately reduce the heat to a simmer and allow the sauce to thicken slightly and reduce for 2-3 minutes. The sauce should be coating the back of a spoon.
  6. Turn off the heat. Add the cooked bowtie pasta and 1 cup of freshly grated Parmesan cheese to the sauce. Stir everything together until the pasta is well coated and the cheese is fully melted, creating a luxurious, creamy sauce. Taste and adjust seasoning with additional salt and pepper as needed.
  7. Slice the rested chicken breasts into tender strips or cubes. Gently fold the sliced chicken into the pasta and sauce, ensuring it’s evenly distributed throughout the dish.
  8. Serve immediately, garnished with extra grated Parmesan cheese and fresh chopped parsley, if desired. Enjoy your delicious, homemade Chicken Alfredo Primavera – a truly satisfying meal that comes together in a flash!
