Ingredients:

For the Donuts: 

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 tablespoon corn starch
  • 1/4 cup unsweetened cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon espresso powder
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 3 tablespoons unsalted butter, melted and cooled
  • 2 tablespoons coconut oil, melted and cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup plain or vanilla Greek yogurt
  • 1/4 cup almond milk (or milk of choice)
  • 1/4 cup strong brewed coffee, cooled

For the Dark Chocolate Mocha Glaze: 

  • 3/4 cup good quality dark chocolate chips or finely chopped dark chocolate
  • 3 tablespoons strong brewed coffee, hot

Directions:

For the Donuts:

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease and flour a 6-cup donut pan, or spray generously with a non-stick baking spray. This ensures easy release.
  2. In a medium bowl, whisk together the whole wheat flour, all-purpose flour, corn starch, cocoa powder, baking powder, kosher salt, and espresso powder until well combined and lump-free. Set this dry mixture aside.
  3. In a large mixing bowl, add both the brown sugar and granulated sugar. Pour in the melted and cooled unsalted butter and melted and cooled coconut oil. Whisk these ingredients together until the mixture is smooth and evenly combined.
  4. Next, add the large egg, vanilla extract, and Greek yogurt to the wet mixture. Continue to whisk until everything is thoroughly incorporated and smooth.
  5. Pour in the almond milk and the strong brewed coffee. Whisk again until the liquid ingredients are fully integrated into the batter.
  6. Carefully add the reserved dry ingredients to the bowl with the wet ingredients. Using a whisk or a spatula, mix until *just* combined. Be careful not to overmix, as this can lead to tough donuts. A few small lumps are perfectly fine.
  7. Transfer the donut batter into a large zip-top bag. Snip off one corner of the bag with scissors to create a small opening (about 1/2 inch wide). This makes piping the batter into the donut molds much easier and neater.
  8. Pipe the batter evenly into each donut mold, filling them approximately three-quarters full.
  9. Bake for 10-11 minutes, or until a wooden toothpick inserted into a donut comes out clean. Avoid overbaking to keep them moist.
  10. Allow the baked donuts to cool in the pan for about 5 minutes on a wire rack. Then, carefully remove them from the pan and transfer them directly to the wire rack to cool completely before glazing. This prevents sogginess.
  11. Once the donuts are completely cool, prepare the glaze. Dip each donut into the warm dark chocolate mocha glaze, ensuring an even coating. Serve immediately for the best experience or allow the glaze to set at room temperature until it’s no longer tacky. Add the dark chocolate chips (or chopped chocolate) and hot strong brewed coffee to a heat-proof bowl. Melt the chocolate mixture over a double boiler, stirring occasionally until smooth and creamy. Alternatively, you can microwave the mixture in 30-second intervals, stirring well after each, until smooth and fully melted. Ensure the glaze is warm when dipping for the best consistency.
