The Perfect Companion: Pairing Bacon Beer Cheese Soup with Other Delights

Last week, I whipped up some incredible Chipotle Pork Sliders with Honey Lime Slaw. While these sliders are absolutely amazing on their own, I envisioned them having a perfect partner. And let me tell you, this Bacon Beer Cheese Soup with Crispy Potato Croutons is a match made in heaven alongside those savory pork sliders. The creamy, rich soup perfectly complements the zesty, tender pork, creating a dynamic duo that will elevate your game day menu to new heights.

But the versatility of this soup doesn’t stop there. Its robust flavor profile makes it an excellent companion to a variety of other dishes. Consider serving it with hearty grilled cheese sandwiches for an ultimate comfort food experience, or alongside soft pretzels for a German-inspired twist. It’s also fantastic as a standalone dish, served with a crusty baguette for dipping. No matter how you choose to serve it, this thick, hearty soup, bursting with bold and harmonious flavors, is guaranteed to be a crowd-pleaser.

A Symphony of Flavors: Decoding the Deliciousness

This soup is a masterclass in flavor and texture, meticulously crafted to provide an unforgettable culinary experience. At its core, the beer truly is the star of the show, imparting a unique depth and complexity that sets this soup apart. Even with a generous 14 ounces of shredded cheese melted in, the distinctive, bold flavor of the bock beer shines through, providing a nuanced bitterness that balances the richness of the dairy.

The Bold Beer Base

The choice of beer is crucial here. While bock beer offers a rich, malty profile, a good pilsner can lend a crisp, clean bitterness, and a pale ale will introduce hoppy notes. Whichever you choose, the beer doesn’t just add liquid; it infuses the entire soup with character, elevating it beyond a simple cheese sauce. This alcoholic component is cooked down, allowing its essential flavors to concentrate and meld seamlessly with the other ingredients, creating a sophisticated base that is both comforting and exciting.

Irresistible Cheesy Goodness

Did I mention there’s a magnificent cheese blend at play? This soup doesn’t rely on just one cheese; it masterfully combines the sharp tang of cheddar, the smoky depth of gouda, and the unparalleled creaminess of Velveeta. The sharp cheddar provides that classic, robust cheese flavor, while the smoked gouda introduces a wonderfully complex smokiness that echoes the bacon. The Velveeta, often overlooked, is the secret to the soup’s incredibly smooth, velvety texture, ensuring there’s no graininess, only pure, melty bliss. This trifecta creates an incredibly rich, decadent, and perfectly balanced cheesy experience that’s utterly addictive.

The Magic of Bacon

And then there’s bacon! Not just any bacon, but thick-cut bacon, cooked until perfectly crispy. The magic begins when the vegetables are sautéed in the rendered bacon grease, infusing the very foundation of the soup with an irresistible, smoky, savory flavor. This initial step lays down a deep umami base that carries throughout the entire dish. But the bacon experience doesn’t end there; right before serving, a generous sprinkling of freshly crumbled crispy bacon is added over the top. This provides a delightful textural contrast and an extra burst of smoky, salty goodness with every spoonful, making each bite a truly dynamic experience.

Crispy Potato Croutons: A Game-Changer

If that weren’t enough to make your mouth water, we take it a step further. We’re talking about Idaho® baby Yukon Gold potatoes, halved and tossed with a delicate blend of smoked paprika, salt, pepper, and Italian seasoning. These humble potatoes are then roasted to crispy-crunchy perfection, transforming them into extraordinary “potato croutons.” Unlike traditional bread croutons, these offer a more substantial bite, a subtle earthy flavor, and a satisfying crispiness that holds up beautifully in the rich soup. Each bowl of this magnificent soup is served with a small, inviting mound of these golden, smoky, crispy potato croutons, adding an unexpected and utterly delightful element that takes this recipe from great to absolutely legendary.

Bacon Beer Cheese Soup with Crispy Potato Croutons

Yield: 6 generous servings

Total Time: 30 minutes

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

For the Bacon Beer Cheese Soup

  • 6 slices thick-cut bacon, cut into 1-inch pieces
  • 1 medium onion, diced
  • 2 celery ribs, finely diced
  • 1 large carrot, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly chopped thyme
  • 1/4 cup all-purpose flour
  • 12 ounces beer (bock, pilsner, or pale ale for best flavor)
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 1 heaping teaspoon dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 8 ounces grated sharp cheddar cheese
  • 4 ounces grated smoked gouda cheese
  • 2 ounces Velveeta, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • Sliced scallions for serving (optional)

For the Crispy Potato Croutons

  • 8 ounces Idaho® baby Yukon Gold potatoes, halved
  • 2 teaspoons olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon smoked paprika
  • 1/4 teaspoon Italian seasoning

Directions:

For the Soup

  1. In a large, heavy-bottomed pot or Dutch oven, cook the diced bacon over medium-high heat until it’s perfectly crispy and golden brown. Using a slotted spoon, transfer the crispy bacon pieces to a paper towel-lined plate to drain; set aside, reserving the rendered bacon grease in the pot.
  2. Add the diced onion, celery, and carrot to the pot with the reserved bacon grease. Sprinkle generously with salt and pepper. Cook, stirring frequently, for 5-6 minutes, or until the onion becomes translucent and the vegetables are tender-crisp. Add the minced garlic and freshly chopped thyme to the pot. Continue to cook, stirring constantly, for an additional 2 minutes until fragrant.
  3. Sprinkle the all-purpose flour into the pot, stirring constantly for 1 minute to create a roux. This will help thicken the soup. Gradually whisk in the beer, followed by the chicken stock, heavy cream, Dijon mustard, and Worcestershire sauce, stirring until well combined and smooth. Bring the mixture to a gentle boil, then reduce the heat to medium-low and allow the soup to simmer for 8 minutes, stirring occasionally, until it thickens slightly.
  4. Turn off the heat. Slowly add the grated sharp cheddar, smoked gouda, and cubed Velveeta, stirring continuously until all the cheese has melted completely and the soup is smooth and creamy. Taste and adjust seasoning with salt and pepper as needed.
  5. Ladle the rich Bacon Beer Cheese Soup into individual bowls. Garnish each serving with a generous mound of the crispy potato croutons, a sprinkle of fresh sliced scallions, and the reserved crumbled bacon. Serve immediately and enjoy the ultimate game day comfort!

For the Crispy Potato Croutons

  1. Preheat your oven to 425 degrees F (220 degrees C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.
  2. Place the halved baby Yukon Gold potatoes into a small mixing bowl. Drizzle with olive oil, then add the kosher salt, black pepper, smoked paprika, and Italian seasoning. Toss thoroughly to ensure the potatoes are evenly coated with the seasonings.
  3. Transfer the seasoned potatoes to the prepared baking sheet, spreading them out in a single layer to ensure even roasting. Bake for 15-20 minutes, or until the potatoes are beautifully golden brown, wonderfully crispy on all sides, and tender in the center.
  1. Storage and Reheating: If you’re not planning to serve the soup immediately, allow it to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3 days. To reheat, gently warm on the stovetop over medium-low heat, stirring frequently to prevent sticking and ensure even heating. You can also reheat it in a slow cooker on the “Low” setting, stirring occasionally.
  2. Serving a Crowd: For larger gatherings, once the soup is hot and ready, transfer it to the bowl of a slow cooker and select the “Keep Warm” setting. This will maintain a perfect serving temperature throughout your party. Remember to stir the soup occasionally to prevent any browning or skin formation around the edges.
  3. Beer Choice: Experiment with different types of beer! A stout can add a deeper, roasted flavor, while a lighter lager might make the cheese notes more prominent.
