Flatbread Pizza:
- 2 10-inch flatbread
- 2 cups shredded Mozzarella cheese

- 1 cup thinly sliced Persian cucumbers
- ¼ cup rice vinegar
- ¼ cup granulated sugar
- 1 teaspoon kosher salt
Peanut Dressing:
- ¼ cup peanut butter
- 1 tablespoon sesame oil
- 2 tablespoons avocado oil
- 1 tablespoon soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons honey
- Juice of 1 large lime
- 1 clove garlic, roughly chopped
- 1 heaping teaspoon ginger paste
- 1 tablespoon Sriracha
- Salt and pepper
