Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup white whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 cup toasted coconut
  • 1 stick unsalted butter, softened
  • 3/4 cup granulated sugar (I used Zulka for natural sweetness)
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 2 tsp. fresh lemon zest
  • 1 cup buttermilk
  • 1 1/2 cups fresh or frozen blueberries (do not thaw if using frozen)
  • 1/2 cup sliced almonds
  • 1/4 cup shredded coconut (for pan)
Instructions
  1. Preheat your oven to 350 degrees F (175 degrees C). Thoroughly grease and flour a standard bundt pan, ensuring every crevice is coated to prevent sticking.
  2. In a large mixing bowl, whisk together the all-purpose flour, white whole wheat flour, baking powder, baking soda, kosher salt, and the lovely toasted coconut. This ensures all dry ingredients are evenly distributed. Set this mixture aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the softened unsalted butter and granulated sugar until the mixture becomes wonderfully fluffy and pale in color, typically taking about 3 minutes. This step incorporates air, making the cake light.
  4. Add the eggs one at a time, beating well after each addition until fully incorporated. Follow with the vanilla extract and fresh lemon zest; beat briefly to combine these fragrant additions into the mixture.

  7. Prepare your bundt pan further by sprinkling the sliced almonds and the 1/4 cup of shredded coconut flakes evenly across the bottom. This will create a beautiful, crunchy topping. Carefully transfer the bundt cake batter directly over the almond/coconut mixture in the pan. Smooth the top of the batter with a rubber spatula.
