Deconstructing the Deliciousness: The Two Layers

What makes these brownies truly special is the harmonious interplay between their two distinct layers. First, we have the brownie base: a foundation of intense chocolate flavor and incredibly fudgy texture. This isn’t just any brownie; it’s rich, dense, and deeply satisfying, providing the perfect counterpoint to the creamy layer above. Made with melted butter and cocoa powder, it achieves that desirable crackly top and moist interior that every brownie enthusiast craves.

Perched atop this chocolatey canvas is the peanut butter cheesecake layer. This isn’t your average cheesecake; it’s whipped to a velvety smoothness, infused with the unmistakable, comforting taste of creamy peanut butter. The cream cheese provides a tangy richness, while the peanut butter adds a nutty depth that complements the chocolate brownie beautifully. When swirled together, these two layers create a marbled masterpiece, offering a delightful blend of textures and flavors in every single square. The slight tang of the cheesecake cuts through the richness of the brownie, creating a balanced dessert that’s hard to resist.

Tips for Baking Success and Storage

Achieving bakery-quality brownies at home is simpler than you might think, especially with a few key tips. For these Peanut Butter Cheesecake Brownies, ensure all your ingredients, especially the eggs and cream cheese, are at room temperature. This helps them combine smoothly and creates a more uniform batter and a creamier cheesecake. When mixing the brownie batter, be careful not to overmix the dry ingredients; mix just until combined to keep the brownies tender and fudgy.

The swirled effect is not only visually appealing but also ensures every bite gets a taste of both layers. Don’t be afraid to get creative with your swirl; a simple butter knife or skewer works perfectly. Baking until the cheesecake is golden brown with a slight jiggle ensures it’s perfectly set without overbaking, which can lead to a dry texture. Once baked, allowing the brownies to cool completely is crucial. This patience will be rewarded with clean slices and a perfectly set cheesecake layer.

To keep your brownies fresh, store them in an airtight container. They will remain delicious at room temperature for up to three days, or you can extend their life by refrigerating them for up to a week. For an extra treat, try warming a slice slightly before serving, allowing the chocolate and peanut butter flavors to truly bloom. These brownies also freeze well, making them an excellent candidate for meal prep or for stashing away for future cravings.

Ingredients

Brownie Layer

  • ½ cup unsalted butter, melted and cooled slightly
  • 1 tablespoon canola oil
  • 2 large eggs, at room-temperature
  • 1 cup + 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose gluten-free flour, (I prefer Bob’s Red Mill 1 to 1)
  • ½ cup cocoa powder
  • ½ teaspoon kosher salt

Peanut Butter Cheesecake Layer

  • 1 8-ounce package cream cheese
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 large egg, at room-temperature

Instructions

  • Preheat oven to 350 degrees F. Line a 8-inch-by-8-inch square baking pan with parchment paper so that it overlaps on each side. Spray the parchment paper with non-stick baking spray or coconut oil.
  • To make the brownie batter, add melted butter, oil, sugar, eggs, and vanilla extract to a large bowl. Whisk until pale in color, about 1 minute. Add flour, cocoa powder, and salt to the bowl. Using a rubber spatula, fold the dry ingredients into the wet ingredients until combined and the batter is smooth.
  • Transfer the brownie batter to the prepared baking pan, spreading the batter evenly into the bottom of the pan.
  • To make the peanut butter cheesecake layer, add cream cheese, peanut butter, sugar, and vanilla extract to the bowl of a stand mixer fitted with the paddle attachment (or to a large bowl using a handheld mixer). Beat until smooth and creamy, scraping down the sides of the bowl as necessary. Add the egg and beat until well combined.
  • Pour the cheesecake batter over the brownie batter, spreading it evenly with a rubber spatula. Using a butter knife, swirl the cheesecake batter into the brownie batter.
  • Transfer the pan to the oven and bake for 35-40 minutes, or until the cheesecake is golden brown in color with only a slight jiggle when you gently shake the pan. Allow the brownies to cool completely before slicing. The brownies will stay fresh in an airtight container at room temperature for 3 days or in the refrigerator for up to 7 days.
