Just the other evening, I found myself in such a predicament at the gym. The entire room seemed to be fixated on me as I embarked on my inaugural journey with the stair stepper. From the comforting familiarity of my treadmill, I’d observed several seasoned gym-goers effortlessly gliding on the contraption. It appeared deceptively simple: step on, and just start stepping. Little did I know, looks can be incredibly deceiving, especially when you’re, shall we say, not exactly a gym aficionado. My expertise, unfortunately, begins and ends with the treadmill.

So, what’s the protocol when you’re clearly clueless? You improvise. You adopt the “fake it till you make it” mantra. You bravely ignore the collective stares and carry on as if your method, however unconventional, is the gold standard. And so, I pressed on, determined to conquer this mechanical beast.

It became painfully clear why I was attracting so much attention: I probably resembled an old, bewildered dog vigorously treading water in a turbulent current. The uncooperative machine seemed to mock my every attempt. As if appearing like a flailing canine wasn’t mortifying enough, my valiant efforts to operate it proved utterly futile. The sheer weight of my body repeatedly pushed the pedals to the lowest possible point. There I stood, a picture of defeat, with the pedals firmly on the ground, my arm stretched awkwardly overhead, frantically mashing every button within reach, desperately hoping to coax the machine into action and, more importantly, make the staring stop. I felt trapped; giving up was not an option.

I simply couldn’t allow myself to appear defeated, even though my cluelessness was glaringly obvious. So, from my low vantage point, I continued my frantic button-pushing crusade. To dismount would be an admission of surrender, and there was no way I was going to let a piece of gym equipment win. With a renewed surge of defiance, I puffed out my chest and began to step with exaggerated confidence, as if the stair stepper and I were long-lost friends. Miraculously, by some divine intervention or perhaps the universe finally taking pity on my plight, the stepper slowly began to rise. A profound thank you to the Gym Gods! I triumphantly managed a solid ten minutes of “stepping,” a personal victory I hold dear.

Ingredients:

Tacos

  • 2 large chicken breasts
  • 3 tablespoons canola oil, divided
  • 1 medium onion, diced
  • 1/2 cup green pepper, diced
  • 3 cloves garlic, minced
  • 2 (14.5-ounce) cans diced tomatoes w/ green chiles (such as Rotel), undrained
  • 2 tablespoons chipotle in adobo sauce, minced (use more for extra heat and smokiness!)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ancho chile powder
  • 1/4 teaspoon cayenne pepper (optional, for an extra kick)
  • 5 dashes Tabasco sauce
  • Salt & freshly ground black pepper, to taste
  • 12 small flour tortillas

Toppings (Get Creative!)

  • Shredded cheese (Monterey Jack or a Mexican blend works wonderfully)
  • Cool sour cream or plain Greek yogurt
  • Crisp shredded lettuce
  • Creamy avocado slices or a scoop of guacamole
  • Freshly diced tomatoes or salsa
  • Lime wedges, for a zesty squeeze
  • Fresh cilantro, chopped

Directions:

  1. Begin by heating 2 tablespoons of canola oil in a large sauté pan or skillet over medium-high heat. Allow the oil to shimmer, indicating it’s ready for the chicken.
  2. Prepare your chicken breasts for even cooking. Place each chicken breast between two pieces of plastic wrap. Using a meat mallet, gently pound the breasts, starting from the center and working your way outwards, until they are uniformly about 1/2-inch thick. This ensures quick and even cooking. Season both sides generously with salt and freshly ground black pepper.
  3. Carefully place the seasoned chicken into the hot sauté pan. Cook for 4-5 minutes on each side, or until the chicken is golden brown, the juices run clear, and an instant-read thermometer inserted into the thickest part registers 165 degrees F (160 degrees F for poultry removed from heat and allowed to rest, as it will continue to cook). Remove the cooked chicken breasts from the pan and transfer them to a cutting board to rest for 5 minutes. Resting allows the juices to redistribute, ensuring tender, moist chicken. After resting, chop the meat into uniform 1/4-inch cubes.
  4. Reduce the heat in the same sauté pan to medium. Add the remaining 1 tablespoon of canola oil. Once hot, add the diced onion and green pepper. Cook, stirring occasionally, until the vegetables soften and become fragrant, which typically takes about 3-5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until aromatic, being careful not to burn it.
  5. Now, add the flavor-packed foundation: stir in the undrained diced tomatoes with green chiles (like Rotel), minced chipotle in adobo, ground coriander, ground cumin, ancho chile powder, and Tabasco sauce. Bring the mixture to a gentle simmer and allow the sauce to cook and reduce slightly, concentrating its flavors, for approximately 10 minutes. This step is crucial for developing a rich, cohesive sauce.
  6. Return the chopped chicken to the pan, stirring it into the vibrant sauce. Cook for an additional 5 minutes, allowing the chicken to warm through and absorb all the incredible flavors. Taste the mixture and adjust seasoning with salt and pepper as needed. You might want a little more spice or salt depending on your preference.
  7. To assemble your tacos, warm the flour tortillas according to package directions (a quick warm in a dry skillet, microwave, or oven makes them pliable and delicious). Scoop a generous amount of the smoky chipotle chicken mixture onto each warm tortilla and pile high with your favorite toppings.
