  • 1/2 pound ground chorizo sausage, adding a bold, spicy kick
  • 1/2 green pepper, roughly chopped
  • 1/2 red pepper, roughly chopped
  • 1/2 medium onion, roughly chopped
  • 1 clove garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder, for a smoky depth
  • 1 teaspoon ground cumin, enhancing the savory notes
  • 1/2 teaspoon coriander
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon smoked paprika, for an extra layer of smokiness
  • 1/4 cup salsa (your favorite variety, adding moisture and flavor)
  • 1 large egg, acting as a binder

Add this finely chopped vegetable mixture, along with all the remaining meatball ingredients (spices, salsa, egg, and crushed chips), to the bowl with the ground beef and chorizo. Using your hands, gently mix until all the ingredients are thoroughly combined, being careful not to overmix, which can lead to tough meatballs.
  3. Measure out generous 1-tablespoon size portions of the meat mixture and roll them into uniform balls. Place the meatballs on the prepared baking sheet, spacing them approximately 1-inch apart to allow for even cooking. This recipe typically yields between 24-28 meatballs. Bake the meatballs for 20 minutes, until they are browned and cooked through.
  4. While the meatballs are baking, prepare the chipotle barbecue glaze. Add all of the glaze ingredients (hot sauce, barbecue sauce, honey, chopped chipotle peppers in adobo, and Worcestershire sauce) to a large saucepan. Whisk thoroughly to combine all ingredients.
