Ingredients

Apple Pie Compote

  • 4 cups diced apples, about 4 large apples, peeled
  • cup maple syrup
  • 2 cinnamon sticks
  • Juice of 1/2 a lemon
  • ½ teaspoon vanilla extract

Overnight Oatmeal

  • cup old-fashioned oats, certified gluten-free
  • 1 teaspoon flaxseed meal, optional
  • Pinch ground cinnamon
  • 2 tablespoons toasted pecans, roughly chopped
  • cup non-dairy milk, I used almond milk
  • ½ teaspoon vanilla extract
  • 1-2 teaspoons maple syrup
  • 3 tablespoons apple pie compote

Instructions

  • To make the apple pie compote, add diced apples, maple syrup, lemon juice, and cinnamon sticks to a saucepan. Bring the mixture to a boil over medium heat. Cook, stirring occasionally, until the apples are tender, about 12-20 minutes.
  • Remove the cinnamon sticks from the pot and transfer the apple mixture to a food processor. Add the vanilla extract and pulse until the mixture resembles chunky applesauce. If you’re not preparing the jars immediately, transfer to an airtight container and store in the refrigerator.
  • To assemble the overnight oats, add all of the ingredients to a mason jar. Shake to combine. Chill in the refrigerator overnight.
