- 1 cup grilled corn kernels, about 2 ears
- 1 cup black beans, drained and rinsed
- 2 tablespoons minced jalapeno, seeds removed
- 3 tablespoons minced red onion
- 2 tablespoons chopped cilantro
- juice 1/2 lime
- ½ teaspoon honey or agave
- Kosher salt and pepper
Tostadas
- 12 corn tortillas
- 2 scallions, chopped
- ⅓ cup crumbled Cotija cheese
- 2 tablespoons chopped cilantro
Instructions
