Some individuals shy away from the process, finding it intimidating or daunting, perhaps conjuring thoughts of “botulism.” However, with a few simple precautions, canning is incredibly safe and straightforward. As long as you meticulously clean and sterilize your jars and use new seals every single time you can, you are absolutely good to go. The fundamental steps are simple: sterilize your jars, fill them with your prepared food, process them in a boiling water bath, and then listen for that satisfying, ubiquitous “pop” of the seal indicating a successful vacuum. But to truly pack a fiery punch in the foreground, I add thinly sliced jalapeños and serrano chiles. This combination of peppers creates a multi-layered heat profile, ensuring every bite of giardiniera is an exciting experience.

Ingredients
  • Brine
  • 1 cup distilled vinegar
  • 1 cup water
  • 1/4 cup + 1 tbs. sugar
  • 2 tbs. kosher salt
  • 1 tsp. red pepper flakes
  • 1 jalapeño, thinly sliced
  • 1 Serrano, thinly sliced
  • Veggies
  • 1/2 cup diced red pepper
  • 2 stalks celery, cut into 1/4-inch slices
  • 4 radishes, sliced
  • 2 carrots, peeled and sliced
  • 1 1/2 cups cauliflower florets, cut into small pieces
Instructions
  1. In a medium saucepan, combine the distilled vinegar, water, sugar, kosher salt, and red pepper flakes. Bring this mixture to a rolling boil over medium-high heat. Once boiling, remove the saucepan from the heat and carefully stir in the thinly sliced jalapeño and Serrano chiles. Allow the brine mixture to cool for approximately 15 minutes.
  2. While the brine is cooling, prepare all your vegetables. Dice the red pepper, cut the celery into 1/4-inch slices, slice the radishes, peel and slice the carrots, and cut the cauliflower florets into small, bite-sized pieces. Place all the chopped vegetables into a large bowl and mix them gently to combine. Take a clean 1.5-liter glass clip-top jar or a large Mason jar and fill it halfway with the mixed veggie medley. Pour half of the warm brine over these vegetables. Then, add the remaining vegetables to the jar and top them off with the rest of the brine, ensuring all vegetables are submerged.
  3. Securely close the jar and place it in the refrigerator. For the best flavor development, allow the giardiniera mixture to pickle for at least 48 hours before serving. This waiting period allows the flavors to meld and the vegetables to achieve that perfect pickled texture. Store your homemade Hot & Spicy Giardiniera in the refrigerator for up to 1 month, enjoying its vibrant taste whenever a craving strikes.
