Ingredients:

For the Salad

  • 1 (1-pound) flank steak
  • 4 slices cooked bacon, crumbled
  • 1 large red onion, cut into 1/2-inch thick slices
  • 2 teaspoons canola oil (or other high-heat cooking oil)
  • 2 large ripe tomatoes, sliced or cut into wedges
  • 1 (5-ounce) container mixed greens (such as spring mix or baby spinach)
  • 1 avocado, perfectly ripe and cut into chunks
  • Salt and freshly ground black pepper, to taste

For the Balsamic Vinaigrette

  • 1/4 cup balsamic vinegar
  • 1/3 cup olive oil (extra virgin preferred)
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey (or maple syrup for a vegan option)
  • Salt and pepper, to taste

 

 

 

 

Directions:

  1. Prepare the Grill: Preheat a gas or charcoal grill to medium-high heat. While the grill is heating, generously season both sides of the flank steak with salt and pepper. Drizzle the 1/2-inch thick red onion slices with canola oil and season each side with salt and pepper.
  2. Grill Steak and Onions: Place the seasoned flank steak and oiled red onions on the preheated grill. Grill the steak for 5-6 minutes per side for a medium-rare to medium doneness, or to your preferred level. Grill the onions for 3-4 minutes per side, or until they are tender, slightly softened, and exhibit beautiful char marks.
  3. Rest and Slice Steak: Once grilled, remove the flank steak from the grill and allow it to rest on a cutting board for at least 10 minutes. This crucial step allows the juices to redistribute, ensuring a tender and flavorful steak. After resting, slice the steak thinly against the grain.
