However, as summer approaches, our focus often shifts towards lighter, more refreshing options that leave us feeling energized rather than sluggish. This is precisely where these incredible Strawberry Banana Smoothie Popsicles come into play.

Forget about busting out your bulky ice cream maker or enduring a 24-hour waiting period before you can enjoy a frozen treat. This recipe is designed for simplicity and speed, allowing you to whip up a batch with minimal fuss.

The process is as straightforward as making your favorite smoothie. All you need is a blender and a few fresh ingredients. Simply combine everything, pulse until perfectly smooth and creamy, and you’re halfway to flavor town. To elevate these popsicles beyond the ordinary, I added a delightful surprise: a layer of crushed vanilla wafer crumbs at the bottom of each mold. This simple addition introduces a wonderful contrasting texture and a hint of extra sweetness, transforming a basic fruit pop into a gourmet experience.

To ensure a luscious, extra-creamy texture and just the right touch of sweetness, I incorporated 2 tablespoons of Coffee-mate Classic Vanilla creamer into the smoothie base. The anticipation will be well worth it! Once frozen, simply run the molds under warm water for a few seconds to easily release your perfect, layered smoothie popsicles. You’ll be amazed at how simple it is to create such an impressive and wholesome treat.

A creamy, vibrant mixture of fresh strawberries, ripe bananas, protein-rich Greek yogurt, and a touch of creamer for extra smoothness. This healthy frozen treat is absolutely perfect for a hot day, offering a guilt-free way to cool down and satisfy your sweet cravings.

Ingredients:

2 ripe bananas

10 fresh strawberries, divided for blending and layering

1/2 cup 2% Greek yogurt (plain or vanilla for extra flavor)

2 tablespoons Coffee-mate Classic Vanilla creamer (or substitute)

1/2 teaspoon pure vanilla extract

1/4 cup fresh blueberries

6 vanilla wafers

Directions:

1. Prepare the wafer crust: Add the vanilla wafers to the bowl of a food processor. Pulse until they form fine, even crumbs. Evenly spoon these wafer crumbs into the bottom of each popsicle mold, creating a thin, crunchy layer. Set the molds aside.

2. Prepare the fruit for layering: Chop 4 of the fresh strawberries into small, bite-sized chunks. These will be used for layering within the popsicles. Set these chunks aside.

3. Blend the smoothie base: Place the ripe bananas, the remaining six strawberries, Greek yogurt, Coffee-mate Classic Vanilla creamer, and vanilla extract into the bowl of your blender. Blend on high speed until the mixture is completely smooth and creamy, with no visible lumps of fruit.

4. Layer the popsicles: Begin by pouring a small layer of the smooth smoothie mixture into each popsicle mold, over the wafer crumbs. Add 4-5 fresh blueberries to each mold, scattering them evenly. Pour an additional layer of the smoothie mixture. Next, add 4-5 of the reserved strawberry chunks to each mold. Finally, top each mold with the remaining smoothie mixture, filling them almost to the brim.

5. Freeze: Carefully insert a popsicle stick into the center of each filled mold. Place the molds in the freezer for 4-5 hours, or until they are completely firm and set. To easily remove the popsicles, run the molds under warm water for a few seconds before gently pulling them out.

Substitution Tip: If you don’t have Coffee-mate creamer on hand, you can substitute it with 2 tablespoons of milk of your choice (dairy or non-dairy) for a similar, though slightly less creamy, result.

Extra Creaminess: For an even thicker, colder popsicle, consider freezing your ripe bananas before blending.
