  • 1 (14.5 ounce) can black, cannellini, or garbanzo beans, drained and rinsed (optional, for added protein and fiber)
  • 2 tablespoons McCormick Salad Supreme seasoning (or similar Italian-style seasoning blend)
  • 1 cup diced cheese cubes (cheddar, mozzarella, provolone, or a mix)
  • 1 cup diced pepperoni
  • 1 cup diced hard salami (or other leftover deli meats like ham or turkey)
  • 1 (16.5-ounce) bottle Italian dressing (your favorite brand)

 

 

Directions:

  1. Cook the rotini pasta according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process and cool the pasta. This prevents the pasta from sticking together and helps cool the salad faster.
  2. In a very large mixing bowl, combine the cooled pasta, diced sweet peppers, green pepper, cucumber, broccoli florets, red onion, drained diced tomatoes, and the optional drained and rinsed beans.
  3. Add the McCormick Salad Supreme seasoning, diced cheese cubes, diced pepperoni, and diced hard salami to the bowl with the pasta and vegetables.
  4. Pour the entire bottle of Italian dressing over all the ingredients in the bowl.
  5. Stir everything together thoroughly, ensuring all ingredients are well combined and coated with the dressing.
  6. Transfer the pasta salad to an airtight container. Refrigerate for at least 30 minutes, or ideally 2-4 hours, before serving. This allows the flavors to meld beautifully.
