Cranberry Orange Oatmeal Cookie Energy Bites

Ingredients:

  • 1 and 1/2 cups old-fashioned oats 
  • 1/4 cup flaxseed meal
  • 1/2 cup almond meal
  • Zest of 1 orange
  • 1 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon Nielsen Massey Vanilla Extract
  • 1/4 teaspoon Nielsen Massey Orange Extract
  • 1 cup dried cranberries

Directions:

  1. Add oats to the bowl of a food processor. Pulse 15x to break up the oats in order to create a coarse oat flour. Transfer to a large bowl. Add flaxseed meal, almond meal, and orange zest to the bowl; stir to combine. 
  2. Add the almond butter, maple syrup, and vanilla and orange extract to the bowl. Stir to combine. Fold in dried cranberries. 
  3. Roll into 1-tablespoon sized balls. Store in an airtight container in the refrigerator for up to 1 week.
