As St. Patrick’s Day approaches, the air fills with anticipation for festive celebrations, vibrant green hues, and, of course, delicious food. If you’re seeking a dessert that perfectly captures the spirit of the holiday while offering a sophisticated and incredibly satisfying flavor profile, look no further than this magnificent Gluten-Free Chocolate Stout Mousse Tart with a Pretzel Peanut Crust. It’s not just a dessert; it’s an experience – a harmonious blend of rich chocolate, subtle stout notes, and a delightful salty-sweet crunch that will leave everyone clamoring for another slice. This recipe stands out as a true culinary gem, ideal for impressing guests or simply treating yourself to something truly special.
One of the most remarkable aspects of this chocolate stout mousse tart is its surprising simplicity. Despite its elegant appearance and complex taste, the active preparation time is incredibly short, allowing you to whip it up in about 30 minutes from start to finish. Yes, you read that right – 30 minutes! This tart is genuinely as easy as whipping heavy cream, making it a perfect last-minute dessert for any festive occasion, especially when you’re short on time but still want to create something memorable. While it benefits from a couple of hours of chilling in the refrigerator to fully set and allow the flavors to meld, you can technically enjoy a slice almost immediately after assembly if instant gratification is what you crave. However, for the ultimate experience of perfectly firm mousse and a crisp crust, a little patience truly pays off.
The Velvety Chocolate Stout Mousse: A Symphony of Flavors
The star of this tart is undoubtedly the chocolate stout mousse. Imagine a cloud-like texture that melts in your mouth, infused with the deep, complex notes of semi-sweet chocolate perfectly complemented by a hint of stout beer. This isn’t just chocolate mousse; it’s chocolate mousse elevated. The stout, typically a dark, rich beer known for its roasted malt flavors, adds an incredible depth and a subtle bitterness that balances the sweetness of the chocolate. It enhances the chocolate rather than overpowering it, creating a sophisticated flavor profile that appeals to even the most discerning palates. To further deepen the chocolate experience and add a touch of warmth, a teaspoon of instant espresso powder is incorporated. Espresso is a secret weapon in chocolate desserts, known for its ability to intensify chocolate flavor without adding a coffee taste. The mousse is then lightened and given its characteristic airy texture with whipped heavy cream, ensuring every spoonful is smooth, rich, and utterly luxurious. Unlike many desserts that can be overly cloying, this mousse strikes a perfect balance, with just enough powdered sugar to harmonize the robust flavors of chocolate and stout.
The Irresistible Pretzel Peanut Crust: A Sweet and Salty Masterpiece
What truly sets this tart apart is its innovative and utterly addictive Pretzel Peanut Crust. It’s the ideal counterpoint to the creamy mousse, providing a textural and flavor contrast that elevates the entire dessert. My love for a good sweet and salty combination is undeniable, and this crust delivers it in spades. Crunchy gluten-free pretzels are crushed and combined with roasted peanuts, creating a base that is both incredibly flavorful and wonderfully textural. The roasted peanuts add an extra layer of depth and nuttiness that pairs exquisitely with chocolate – a classic combination that never disappoints. A touch of brown sugar and melted butter bind everything together, resulting in a firm, golden-brown crust that holds up beautifully to the rich filling. This crust isn’t just a vehicle for the mousse; it’s a vital component that contributes significant flavor and an incredibly satisfying crunch, providing the perfect textural harmony to the ultra-smooth chocolate stout filling. The fact that it’s made with gluten-free pretzels means that everyone can enjoy this delightful treat without compromise.
If You Prefer Desserts That Are Rich, Not Overly Sweet, This Chocolate Stout Mousse Tart with Pretzel Peanut Crust Is 100% for You.
This tart is truly a revelation for those who appreciate desserts that are rich and decadent without being excessively sweet. The careful balance of ingredients ensures that the robust flavors of the chocolate and stout shine through, with just enough powdered sugar to provide a pleasant sweetness without overwhelming the palate. The bitterness from the stout beer is expertly balanced, creating a harmonious and sophisticated taste. To add a final touch of elegance and visual appeal, and because there’s absolutely nothing wrong with a little extra chocolate, I recommend sprinkling some delicate shaved dark chocolate over the top of the mousse before serving. For an even more indulgent experience, a drizzle of salted caramel can also be added, enhancing both the sweet and salty notes. This tart is not just a dessert; it’s a celebration of textures and flavors, from the crunchy, salty crust to the smooth, rich mousse, making it an unforgettable treat for St. Patrick’s Day or any special occasion.

Ingredients
Chocolate Stout Mousse
- 8 ounces semi-sweet chocolate, roughly chopped
- ⅓ cup stout beer, your favorite brand
- 1 and 1/2 cups heavy whipping cream
- 1 teaspoon instant espresso powder
- ⅓ cup powdered sugar, sifted
- ½ teaspoon vanilla extract
- Garnish: shaved chocolate and salted caramel drizzle
Pretzel Peanut Crust
- 2 cups gluten-free pretzels, I used ALDI
- ½ cup roasted peanuts
- 3 tablespoons brown sugar
- ¼ cup unsalted butter, melted
Instructions
-
Preheat the oven to 350 degrees F. Lightly grease a 9-inch tart pan.
-
To make the chocolate stout mousse, add chocolate and stout to a large heat-proof bowl. Place the bowl over a pot of simmering water, making sure that the bowl doesn’t come in contact with the water. Allow the chocolate to melt, stirring often, until smooth. Remove from the heat and allow the chocolate to cool while you prepare the crust.
-
To make the crust, add pretzels, peanuts, and brown sugar to the bowl of a food processor. Pulse until the mixture resembles a fine crumb. Slowly drizzle in the melted butter while simultaneously pulsing. Continue to pulse until the mixture resembles wet sand. Transfer the mixture to your prepared tart pan. Press the mixture firmly into the pan and slightly up the sides. I find that this is easiest with a measuring cup or small glass. Bake the crust for 10-12 minutes, or until golden brown. Cool completely before adding the mousse.
-
Add the heavy cream to a stand mixer fitted with the whisk attachment (or in a large bowl using a handheld mixer). Beat until soft peaks form. Add the espresso powder, powdered sugar, and vanilla extract. Continue to beat until stiff peaks form. Gently fold in the cooled chocolate. Transfer the mousse to the tart pan. Garnish with shaved chocolate. Cover and refrigerate for at least 2 hours before serving. The tart will stay fresh in the refrigerator for up to 5 days.
Notes
- If you don’t own a tart pan, you can use a 9-inch pie pan.
- If you’re not following a gluten-free diet, you can substitute an equal amount of regular pretzels.
